Healthy Meals, Budget Cooking, and Food Literacy
At AGAPI Inc., we believe that learning how to prepare healthy food is one of the most powerful life skills a child can gain. Food education not only strengthens physical health—it builds confidence, connection, and resilience within families and communities.
Through our School Nutrition & Cooking Education Program, Zoi Maroudas, Founder and CEO of AGAPI Inc., medical nutritionist and Mediterranean diet expert, volunteers her time to teach students in Title I schools how to cook simple, nourishing meals within a budget.
These hands-on classes empower children to understand where food comes from, how to prepare it, and why it matters for their health and their families.
What Students Learn
In each class, students participate in practical, engaging lessons that bring nutrition to life. Topics include:
• Cooking simple, healthy meals on a budget
• Understanding the nutritional foundation of ingredients
• How foods are grown, harvested, and prepared
• Reading and understanding food labels and nutrition facts
• Recognizing healthy and unhealthy ingredients
• Building confidence in the kitchen
These lessons help students develop life skills that many children are not exposed to at home, especially in communities facing food insecurity or limited access to nutrition education.
Food as a Place for Family Connection
Beyond nutrition, cooking together creates something deeper—connection.
When families gather in the kitchen, peeling potatoes, slicing onions, smelling fresh herbs, and preparing meals together, something powerful happens. Conversations unfold naturally. Parents and children talk about their day, share memories, and open up about challenges.
For many families, these moments become a time of bonding, healing, and communication. Children may share if they are being bullied at school. Parents may talk about stresses at work. In these simple moments of preparing food together, families create space to listen, support, and understand one another.
In many ways, the kitchen becomes a place of comfort and emotional connection, almost like a family meeting—where everyone feels heard and valued.
Empowering Children to Contribute at Home
In many Title I communities, children may live with grandparents or extended family members who carry significant responsibilities. When students learn to cook and prepare meals, they become active contributors in their households.
Parents have shared powerful feedback after these classes. Many describe their children coming home excited to cook, with fifth and sixth graders preparing meals for their families and proudly sharing what they learned in school.
Children begin to understand that they can play a meaningful role in caring for their families and themselves.
Five Years of Impact
This program has been implemented for over five years in schools, with overwhelmingly positive feedback from students, teachers, and parents.
Educators report that students become more engaged when learning connects to everyday life. Families share that children are more interested in healthy food and more confident in helping in the kitchen.
The program is not only about food—it is about empowerment, education, and strengthening families.
Expanding the Program Through Educational Videos
AGAPI Inc. is now working to expand this initiative by creating educational cooking and nutrition videos that can reach children and families far beyond the classroom.
These videos will allow us to reach:
• Rural Alaska communities
• Families without access to in-person classes
• Schools seeking nutrition education resources
• Children who want to learn how to cook healthy meals at home
With video education, we can extend this program to thousands of children who may never otherwise receive hands-on nutrition guidance.
Help Us Film and Share These Lessons With More Children
AGAPI Inc. is working to expand this program by producing educational cooking and nutrition videos so that children and families in rural Alaska and underserved communities can learn these life-changing skills even if they cannot attend classes in person.
Creating high-quality educational videos requires filming equipment, educational materials, and classroom resources so we can capture and share these lessons with thousands of children and families.
